6 eggs, separated at room temperature

1 c flour
1 c canned pumpkin
2 tsp cinnamon
1 tsp baking powder
1 tsp ginger
1/2 tsp nutmeg
salt
4 c powdered sugar
2 (8 oz) pkg cram cheese
1 tsp vanilla
1 c walnuts

Directions:
Grease 151/2 x 101/2 jelly roll pan. Beat egg whites until soft peaks form. Beating at high speed gradually beat in 1/2 c sugar, 2 tablespoons at a time. Preheat oven to 375 fold in flour, pumpkin, cinnamon, baking powder, ginger, nutmeg and 1/2 c sugar and 1/2 tsp salt and egg yolks. Makes 2 cakes. Bake at 375 for 12 minutes. Beat cream cheese, vanilla, and 3 cups powdered sugar and 1/2 teaspoons salt until blended. Stir in nuts and chill about 1 hour. Roll cake like jelly roll and fill with cream cheese mixture. Makes 2 jelly rolls.
