3 tbsp. lime juice
1 tbsp. extra virgin olive oil
2 tsp. sugar
1/4 c. chopped green onions
1/4 c. chopped fresh cilantro
1 (12-16 oz) package of coleslaw

Directions:
Directions:
Combine lime juice, olive oil and sugar in small bowl. Combine green onions, cilantro, and coleslaw in a large bowl. Drizzle juice mixture over slaw; toss well to coat.

Jody Peach's version of this coleslaw calls for 1/2 cup of reduced fat mayonnaise, 1/4 teaspoon ginger, and 3/4 teaspoon salt instead of olive oil and green onions. The lime juice is reduced to 2 tablespoons and the sugar is increased to 2 tablespoons.
