1 cup bulgar (or cracked wheat, though not so good)
2 c boiling water
1/4 c chopped fresh mint leaves, or 2 T dry
1/2 c scallions, chives or onions, chopped
1/3 c oil
1 c chopped parsley
1/2 tsp ground pepper
2 tsp salt
1/4 c lemon juice
2 chopped medium tomatoes

Directions:
Directions:
Pour boiling water over bulgar and let stand one hour. Add and toss remaining ingredients; chill. Serve on lettuce leaf or plain.
