"As viscous as motor oil swirled in a swamp, redolent of burnt bell peppers nested in by incontinent mice and a finish reminiscent of the dregs of a stale can of Coca-Cola that someone has been using as an ashtray. Not a bad drink, though."--Excerpt from "The Moose Turd Wine Tasting" by T. A. Nonymous

4 green onion, chopped
1 clove garlic, minced
1/2 tsp. basil
1 T. olive oil

Directions:
Halve squash length wise and clean out seeds. Turn open side down in skillet with 1 inch of water. Simmer 20 minutes. Microwave: put in microwave safe dish with 1/4 c. water. Cover with plastic wrap and cook 8 minutes on high. Cool enough to handle. Scrape inside of squash with fork and it makes long spaghetti like strands. Put in bowl and season with salt & pepper.

For Sauce: While squash is cooking, put olive oil in skillet with onion, garlic and basil. Saute 2-3 minutes. Then add spaghetti sauce. Heat thoroughly. Put sauce on scraped spaghetti squash and top with parmesan cheese. Can serve with side of meat, or salad for a lighter meal.
