1 lb. pkg. dried pinto beans
6 bacon slices
1/4 cup onion, chopped
1/4 cup green pepper, chopped
1 clove garlic, minced
1 tsp. salt (or to your taste)
1 tsp. cumin powder
1 tsp. black pepper
Monterey Jack cheese, shredded

Directions:
Directions:
Wash beans well. Place in large pan, cover with water and soak overnight. Cook beans slowly until tender. Drain reserving the liquid.

In large skillet saute bacon slices until crisp. Drain dripping leaving enough to saute vegetables. Add onion, green pepper and garlic and saute until tender. Stir in beans, salt & pepper. Cook on medium low , stirring in a little liquid and mashing the beans

Spread beans in a glass pie plate Cover with cheese, arrange slices of green pepper and chopped fresh tomatoes on top of cheese.

Bake 350 Until cheese is melted, about 15 minutes.
