1 lb green or yellow split peas
1 1/2 qts water from cooking smoked pork, tongue, or corned beef
3 medium onions, chopped
2 diced carrots
2 or 3 small bay leaves
Celery tops, chopped
Parsley sprigs, chopped
4 small chili peppers, or a dash of cayenne pepper

Directions:
Directions:
Wash and drain peas. Put all ingredients in 6-qt kettle. Bring to a boil; cook hard for 2 minutes. Turn off heat; let stand for 1 hour. Bring to a boil; reduce heat, cover and simmer for one hour, or until the peas are soft.
Season with salt and pepper. Serve as is or puree through food mill, sieve, or electric blender. For partially smooth soup, mash vegetable with potato masher or beat with rotary blender or electric mixer.
