Crust:

1 1/2 c. Graham cracker crumbs.
3 T. Sugar.
1/2 tsp. Cinnamon.
1/4 lb. ( 1/2 stick) Unsalted butter melted.

Filling:
24 oz. Cream cheese.
1 1/4 c. Extra fine sugar.
6 Eggs, separated.
1 pt. Sour cream.
1/3 c.Flour.
2 tsp. Vanilla extract.
Lemon Zest from one lemon.
Juice of 1/2 lemon.
1 T. Powered sugar

Crust:

Grease a spring form pan with butter.

Place pan on center of a 12 inch square of aluminum foil and press foil up around sides of pan.

Combine graham cracker crumbs, sugar, cinnamon and melted butter until well blended and press 3/4 c. of crumb mixture into bottom and sides of pan.

Chill pan while making filling. Reserve remaining mixture for topping.

Filling:

With wooden spoon beat cream cheese until soft. Gradually beat in sugar until light and fluffy.

Beat in egg yolks one at a time until well blended.

Stir in sour cream, flour, vanilla, lemon zest and juice until smooth.

Beat egg whites until stiff and fold into the cheese mixture.

Pour into prepared pan and bake at 350 degrees for 1 hour and 15 minutes or until top is golden.

Turn off oven, but keep cake in oven for 1 hour.

Remove cake and let cool. Sprinkle remaining crumbs on top and chill overnight.

Dust with powdered sugar just before serving.
