4 large potatoes, scrubbed and diced
1 c onion, sliced thin
3 c water, bullion or stock
1 can evaporated milk
2 tsp salt
pepper to taste
2 tsp chopped parsley

Directions:
Directions:
Cook potatoes and onions in water. Do not drain. Mash somewhat, add salt, pepper, milk and parsley. Heat thoroughly. Do not boil.
