1/4 c milk
1/4 c water
1/2 stick unsalted butter (1/4 c)
1/4 tsp salt
1/2 c flour
2 large eggs
1 c freshly grated Parmesan cheese
Pepper to taste

Directions:
Directions:
In a heavy saucepan combine milk, water, butter, and salt and bring to a boil over high heat. Reduce the heat to moderate, add flour all at once and heat mixture with a wooden spoon until it leaves the side of the pan and forms a ball. Transfer the mixture to a bowl and whisk in eggs, one at a time, whisking well after each addition. Stir in Parmesan cheese and pepper to taste. Drop the batter in 8 mounds on a buttered baking sheet. Bake the puffs in upper 1/3 of a pre-heated 400
