CAKE: 2 c sugar 3/4 c oil 3 eggs 2 c flour 3 c grated carrots 2 tsp baking soda 2 tsp cinnamon 1 tsp salt 1 1/2 c walnuts (if desired)
FROSTING 8 oz cream cheese (soft) 1/2 c butter or margerine (soft) 2 tsp vanilla
Combine and mix all of the cake ingredients and pour into a 9 x 13 inch baking pan. Bake for 40 mintues at 325º. When the cake has cooled, combine and mix the frosting ingredients and spread it on the cake.
