Ingredients:  
1 lb boneless skinless chicken breasts (cut into strips)
1 tbsp oil
1 c chicken broth (13 3/4 oz)
1 c tomato sauce (8 oz)
1 pkg Taco seasoning mix (1 1/4 oz)
1 pkg frozen corn (10 oz)
1 med red or green pepper (or a combination cut into strips)
1 1/2 c minute rice
1/2 c sour cream
1/2 c shredded cheddar cheese

Directions:
Directions:
Cook & stir chicken in hot oil in large skillet until brown. Add broth, tomato sauce & seasoning mix. Bring to boil. Reduce heat. Cover & simmer 5 minutes. Add corn & red & green peppers. Bring to a boil. Stir in rice, cover. Remove from heat. Let stand for 5 minutes. Fluff with fork. Top with cheese & sour cream.
