1 1/2 c warm apple juice concentrate (containing ascorbic acid)
4 tsp yeast
1 tsp salt
3 1/2 cup whole grain flour
1 tbsp vinegar
1 cup oat bran
1 egg white

Topping: Optional
Salt or sesame seeds

Directions:
Directions:
Dissolve yeast in juice. When bubbly add salt, vinegar and 2 cups flour. Beat till smooth. Work bran and flour in. Let rise 1 hour. Punch down.

Now is when the children have fun! Divide the dough into 15 pieces. Roll each one into a long rope. Make pretzel shapes or anything they come up with: letters, hearts, animals, etc. Use water to glue 2 parts together. Brush with beaten egg white. Sprinkle topping on it if desired. Allow to rise on baking sheet 15-20 minutes. Bake 400 for 20 minutes.
