1 (3 lb.) chuck roast
1 1/2 c. water
1 1/2 c. chopped onion
1 1/4 c. chopped green pepper
1 c. chopped celery
2 cloves garlic, minced
2 c. ketchup
2 tbsp. brown sugar
1 tsp. salt
1 tsp. dry mustard
1 tsp. paprika
1/2 tsp. garlic salt
1/2 tsp. chili powder
1 bay leaf
2 tbsp. cider vinegar
1 tsp. Worcestershire sauce
2-3 dashes hot sauce
Hamburger buns

Trim excess fat from roast. Place roast in a large Dutch oven; add water, onion, green pepper, celery, and garlic. Cover and cook over low heat 4 hours or until meat is tender. Drain, reserving 1 1/2 c. broth. Shred meat, and return to Dutch oven.
Add reserved broth, ketchup, and next 10 ingredients; stir well. Bring mixture to a boil; cover, reduce heat, and simmer 30 minutes. Uncover and simmer an additional 30 minutes. Remove and discard bay leaf. Serve shredded beef on hamburger buns.
Makes 12 servings.
