1 can Italian style diced tomatoes
1 1/4 cups shredded mozzarella cheese
1/4 cup chopped fresh basil
1 6 oz package of stuffing mix for chicken
8 small boneless chicken breasts (2lbs)
1/3 cup Red Pepper Italian Dressing
2 Tbsp. grated parmesan reggiano cheese

Preheat Oven to 350
Combine tomatoes w/liquid, shredded mozzarella, basil and stuffing mix - stir until moistened.
Put 2 chicken breasts in a large freezer bag. pound chicken with a rolling pin until chicken is 1/4" thick. Repeat for remaining chicken breasts 2 at a time.
Place pounded chicken breasts smooth side down on a cutting board and spread about 1/8 of the stuffing mixture.
Roll the chicken starting at the narrow end as tight as possible around the stuffing mixture.
Place in 13 x 9 baking dish with seam side down (holds together better).
Pour dressing over chicken and sprinkle parmesan cheese.
Bake for 40 minutes.
Sprinkle with remaining mozzarella and bake another 5 minutes.
