3 large baking potatoes
tsp salt
18 small spinach leaves
1 c sliced fresh mushrooms
6 tbsp sour cream (I used reduced fat)
2 tbsp crumbled blue cheese (I used extra)
1 tbsp chopped fresh chives

Directions:
Directions:
Scrub potatoes, prick skin with fork, place on paper towels and microwave on high 10-15 minutes or just until tender. Turn potatoes half way through for thorough cooking. Let stand 10 minutes.

Heat grill (you can use your oven). Cut potatoes in half lengthwise. Scoop out 1 Tbsp pulp from each half and discard. (I scooped a little more than a tablespoon out so the filling would stay on the top of the potato). Sprinkle potatoes with salt. In the hole, layer 3 spinach leave, mushrooms and 1 Tbsp of sour cream. Sprinkle each with blue cheese and chives.

Place potatoes on gas grill over low-medium heat. Cover and cook 10-15 minutes or until potatoes are thoroughly heated and cheese is melted.
