1/2 c Sugar
1/2 c Brown Sugar
1/2 Butter (softened)
1/2 c Peanut Butter
1 Egg
1 tsp Vanilla
1/4 tsp Salt
1 3/4 c All Purpose Flour
1 tsp Baking Soda
1/4 c Sugar
48 Milk Chocolate Hershey Kisses (unwrapped)

Directions:

Heat oven to 375. Combine sugar, brown sugar, butter and peanut butter in a large bowl. Beat at medium speed until light and fluffy. Add egg, vanilla an salt. Continue beating until well mixed. Add flour and baking soda. Continue beating scraping bowl often, until well mixed. Shape dough into 1 inch balls. (if dough is too soft, refrigerate 30 mins). Roll balls in 1/4 c sugar. Place 2 inches apart onto ungreased cookie sheet. Bake for 8-10 mins or until light golden brown. Remove from oven; immediately press 1 kiss in center of each cookie. Remove from cookie sheet and cool completely on wire rack.

The kisses will soften after pressing into hot cookies. To cool the chocolate quickly, refrigerate cookies for 20 mins until chocolate is firm or let stand at room temperature at least 2 hours.
