6 Roma tomatoes, coarsely chopped
12 Greek olives, pitted and halved
1/4 cup capers, rinsed and drained
1/4 cup chopped fresh parsley
1/4 cup minced green onions
2 ribs celery, chopped
1/2 tsp. salt
1/2 tsp. freshly ground pepper
3 tablespoons red wine vinegar
6 tablespoons extra virgin oil
lettuce leaves

Directions:
Directions:
Combine tomatoes, olives, capers, parsley, green onion, celery, basil, salt, pepper, vinegar, and olive oil in a large bowl. Cover and marinate at least 30 minutes in the refrigerator. To serve, line serving plate with lettuce leaves and top with tomato salad.
