2 fillet mignons, cut 1/2 -1 inch thick
1/4 - 1/2 tsp cracked pepper
Onions;
2 large sweet onions, peeled and sliced in 1/4 inch slices
2 tsp canola oil
1/4 c beef broth
2 tsp balsamic vinegar
2 tsp light brown sugar
2 tsp butter
1 1/2 tsp coarse grain mustard

Onions;
Prepare onions before grilling fillets. Place oil in skillet add onions and cook over medium high heat until onions begin to brown. Add balsamic vinegar and 1/8 c beef broth. Reduce heat and cook uncovered for 15-20 minutes or until the onions are soft. Mix remaining beef broth and rest of ingredients; add to onions. Stir to blend and cover; keep warm until ready to serve.
Filet Mignon;
Season fillets with pepper and grill over a hot fire for 3-5 minutes per side depending on thickness and degree of desired doneness
