3 eggs (well beaten)
2-1/4 c. sugar
3 tsp. vanilla
1 c. vegetable oil
2 c. shredded zucchini
3 c. flour
tsp. baking powder
1 tsp. salt
1 tsp. baking soda
3 tsp. cinnamon
1 c. nuts or raisins (chopped)
1-2 tsp. cloves (ground)

Directions:

Beat eggs until light and fluffy. Add sugar, oil and vanilla. Blend well. Stir in zucchini. Sift dry ingredients and blend into creamed mixture. Fold in nuts. Bake in 2 greased and floured loaf pans in 350 oven. Cool then unmold.
