2 1/4 oz pkg Active Dry Yeast
2 c Warm Water (divided)
1 c Vegetable Shortening
1 c Sugar
1 tsp Salt
2 Eggs
6-7 c All Purpos Flour (divided)

Filling:
1 lb Walnuts (grounded)
1 1/2-2 c Sugar
1 1/2 - 2 tsp Ground Nutmeg

Assembly:

1 1/2 c Melted Butter (divided, 3 sticks)

Dough:
Dissolve yeast in 1 c water in small bowl. Combine remaining water and shortening in a saucepan; heat slightly to dissolve and cool. Mix sugar, salt, eggs, yeast mixture and shortening in a large bowl. Add 6 c flour, 2 c at a time. Knead on a floured surface until smooth; adding another 1/2-1 c flour if needed. Cover and let rise until doubled in size for 30 mins - 1 hr.

Filling:
Combine walnuts, sugar and nutmeg in a medium bowl and mix well.

Assembly:
Seperate dough into 5 pieces. On a floured surface, roll each piece into a 10x5 inch rectangle. Brush each side with 1/4 c butter and sprinkle 1 1/2 c filling on top. Roll up to form a 15 inch roll. Repeat with remaining dough. Place on baking sheets 2 inches apart. Cover and let rise 1 hour. Preheat oven to 350 and bake 30-35 mins until golden. Brush lightly with remaining butter. Place on wire rack to cool before slicing each roll into 15 pieces.
