1 medium onion (chopped)
2 cloves garlic (minced)
3 T. corn oil
4 corn tortillas (cut in thin strips)
1 T. cumin powder
2 c. tomato sauce
1 bay leaf
2 qt. chicken broth
¼ tsp. red pepper flakes
1 lg. carrot (chopped)
1 lg. potato (chopped)
½ lb. green beans (cut into ½” pieces)
1 medium zucchini (chopped)
1 can great northern beans
1 whole cooked chicken breast (diced)

Directions:
Directions:
In a large pot, heat oil and sauté tortilla strips until crisp. Set aside. Sauté onion and garlic until soft. Add tomato sauce, broth and beans with their liquid and spices. Add chicken breast and cook until done. Remove to cool. In the meantime, add the vegetables and ½ of the tortilla strips and simmer until tender. Add cooked chicken to the soup. Garnish with remaining tortilla strips.
