2 medium cucumbers (sliced)
2 T. oil
c. vegetable juice
1 clove garlic (minced)
2 T. red wine vinegar
1 T. fresh basil (chopped)
tsp. salt
1/8 tsp. pepper
1/8 tsp. cumin
1 plum tomato (chopped)
Basil leaves for garnish

Directions:
Directions:
On large serving platter, arrange sliced cucumbers in a spiral pattern. For dressing, in a small bowl beat next 8 ingredients until well combined. Stir in tomato pieces. Pour over cucumbers to evenly coat. Garnish with basil leaves.
