8 lg. potatoes
1 Tbl. vegetable oil
10 lg. eggs
1 lb. cheddar cheese (shredded)
1 c. chopped onions
2 c. chopped ham
c. green chili (chopped) (optional)
1 c. milk
1 c. green peppers (chopped)

Directions:
Directions:
Peel and dice potatoes. Fry potatoes in oil until cooked, season to taste. I like red pepper, black pepper and seasoned salt. When the potatoes are halfway done, add the green peppers, onions and ham (green chili too). While potato mixture is cooking, scramble eggs and milk together in a separate bowl. When potatoes are fully cooked, pour the egg mixture over them. Stir the eggs and potatoes frequently until the eggs are all cooked. Liberally sprinkle shredded cheese on top. When cheese is melted, it is ready to serve. Enjoy!
