1 1/2 c. sifted flour
1/2 tsp. salt
Take out 1/4 cup flour and put in a small container, then mix with 3
Tablespoons cold water to make a paste.

Mix 1/2 c. Crisco shortening into sifted flour and salt. Add the paste.
Gently knead together.

For a single pie crust..... Make holes with fork only for a single pie shell.

For fruit double crust pie (or Quiche) brush bottom of crust with white of 1 beaten egg then sprinkle 1 1/2 - 2 tbsp. flour over it and leave while mixing filling....this keeps the bottom crust from getting soggy.

Bake at 450 degrees for 12-15 minutes.

Never, never double this recipe.

For double crust pie you can use the left over beaten egg white to brush over the top crust which gives it a nice glazed look when baked.
