1 16 oz. pink salmon
1 egg
1/3 c. minced onion
1 1/2 c. flour
1 1/2 tsp. baking powder
1 1/2 c. vegetable shortening

Directions:
Directions:
Drain the salmon and reserve 2 tablespoons of its juice. In medium mixing bowl, combine salmon, egg and onion until sticky. Stir in flour. Add baking powder to the reserved salmon juice. Stir well and add to salmon mixture. Form small patties and fry in shortening until golden brown, approximately 3 minutes on each side.
