4 ounces vegetable stock
1/4 cup celery, diced 1/2 inch
1/4 cup carrots, diced 1/2 inch
1/4 cup leeks, dice 1/2 inch, white part only
1 salmon fillet, 8 ounce portion

Directions:
Directions:
Combine the vegetable stock and the vegetables and bring to a simmer over low heat. When simmering, add add the salmon. Allow poaching until cooked, about 8 to 10 minutes. Serve with prepared dipping sauces.
