3/4 c. sugar
1 1/2 c. mashed bananas(3 large)
3/4 c. vegtebale oil
2 eggs
2 c. of all purpose flour
1/2 tsp.baking soda
1/2 tsp. salt
2 tsp.vanilla
1/2 c. walnuts(optional)

Directions:
Directions:
Preheat the oven to 325 and grease a loaf or miffin pan.

Mix sugar, bananas, oil and eggs together in a large bowl.

Mix all the other ingredients in a seperate bowl and gradualy add them to banana mixture.

Bake about 1 hour or untill a tooth pick comes out clean. The muffins may take less time then the bread.
