Ingredients:  
2 c canned sweet potatoes
1 1/4 c btter or oil
1 3/4 c sugar
1 tsp cinnamon
1/2 tsp ginger
3 c self rising flour
3/4 c buttermilk
2 tsp soda
4 eggs, beaten
Frosting:
1 stick of butter
8 oz pkg of cream cheese
1 box powdered sugar
1 c pecans, chopped
1 can angle flake coconut
1 tsp vanilla

Directions:
Directions:
Mix oil, sugar, add eggs and potatoes. Combine flour, ginger, cinnamon and soda. Add to the mixture along with the buttermilk beat 3 minutes. Bake at 350 for 35 minutes.
Frosting:
Melt cream cheese with butter in double boiler then blend with other ingredients
