2 c flour
5 tsp unsweetened cocoa
2 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
1/2 tsp cloves
1 c butter
2 c sugar
1 c mashed potatoes
4 egg yolks, slightly beaten
4 egg whites, beaten
1 c chopped pecans
1 c raisins
3/4 c maraschino cherries, drained and chopped

Preheat oven to 350. Grease and lightly flour 2 (9 inch) layer cake pans. Sift flour with cocoa, baking powder, cinnamon, salt and cloves. In large bowl with electric mixer at medium speed beat butter with sugar, potato and yolks until light and fluffy. At low speed, gradually beat in flour mixture. With electric mixer at hi speed beat egg whites until stiff peaks form. With wire whisk or rubber spatula gently fold beaten egg whites into flour mixture. Stir in nuts, raisins and cherries. Turn into pans dividing evenly.
Bake 40 minutes. Frost with caramel frosting.
