Pork Roast (boneless Boston Butt) trimmed and baked.
Several mixed salad greens
Purple onion sliced
Tomatoes quartered
Cucumbers unpeeled, slice
Zucchini squash unpeeled, sliced and quartered
Yellow Summer squash unpeeled, sliced and quartered
Dried cherries or cranberries
Apples unpeeled, cubed bite size
Pine nuts

Directions:
While pork roast is still warm pull apart.
Toss salad ingredients and dried cherries. Top with pulled pork and pine nuts. Swirl Honey Mustard on top of pork
