1 small pumpkin
1 Onion, chopped
2 tbsp. Oil
1 lb. Ground Beef
2 tbsp. Soy Sauce
1 1/2c. cooked Rice
2 tbsp. Brown Sugar
1 (4oz.)can Sliced Mushrooms, drained
1 can Cream of Mushroom soup
1 (8oz)can sliced Water Chesnuts, drained

Directions:

Cut off top of pumpkin and clean thoroughly. Draw on a face with black permanent marker. Saute onion in oil. Add meat and brown. Drain. Add soy sauce, brown sugar, mushrooms, and soup. Simmer 10 minutes. Add cooked rice and water chesnuts. Spoon into pumpkin shell. Replace lid and place on baking sheet. Bake at 350 for 1 hour or until meat of pumpkin is tender. For your vegetable, scoop out pumpkin.
**I also make this w/o the pumpkin.
