1 bag Carrots, peeled and cut in large chunks
18 Soda Crackers, crumbled
1tbsp. minced Onion
1/4c. Butter, melted
Cheddar Cheese, grated

Directions:
Directions:
Boil carrots in salted water until al dante; reserve 1 cup of liquid from cooked carrots. Mash carrots; stir in crackers, onion, butter, and pepper to taste. Add reserved liquid, 1/4 cup at a time until good consistency. Pur into casserole dish coated with spray oil. Cover with grated cheese. Bake for 15 minutes at 350
