3/4 c. sugar
1/3 c. peanut oil (may substitute any healthy oil)
1 tsp. lemon juice
1 c. ripe papaya pulp
2 eggs
1 1/2 c. flour
1/2 c. wheat bran or oatmeal
1 tsp. baking soda
Dash of salt
1 tsp. cinnamon

Directions:
Directions:
Mix together sugar, shortening, lemon juice, papaya pulp and eggs. Sift together flour, baking soda, and salt; add cinnamon. Combine wet ingredients and dry ingredients. Bake in a well-greased loaf pan at 350 for 45 minutes or until brown.

This recipe is my favorite one from Cote d'lvoire (The Ivory Coast). Elaine Schulte is a missionary serving with Bibles International, which is headquartered in Grand Rapids, Michigan. In years past, Elaine served as a missionary nurse in Cote d'lvoire.
