4 cups shredded zucchini
4 eggs
1/4 cup biscuit mix
1 cup shredded Cheddar cheese
1 tablespoon chopped parsley
1 tablespoon dried onion flakes (I use raw onion)
2 tablespoons grated Parmesan cheese
garlic salt, salt and pepper to taste

Directions:
Directions:
Drain zucchini in a colander for 1 hour; press out all juice. Lightly beat eggs slightly in large bowl and add zucchini and remaining ingredients.

Pour mixture into a 2-quart casserole and bake at 350 for 25 - 30 minutes. Serve immediately.
