1 Cup of sifted flour
1/4 Cup of powdered sugar
1/2 Cup of melted butter (1 stick)
2 Tablespoons flour
1/2 Teaspoons of Baking powder
2 Large Eggs, beaten
1 Cup of Sugar
Graded rind of one Lemon, Get all you can
3 Tablespoons of Lemon Juice (use all the juice from the Lemon)
Powdered Sugar to sprinkle on the top

Directions:
Directions:
Combine the 1 cup of sugar with the 1/4 cup of powdered sugar. Add melted butter, mix well.

Make a ball out of the dough and press evenly into an 8 X 8" pan. Spraying with Pam helps get them out easier. Bake at 350 for 18 to 20 minutes, until lightly brown.

Combine the 2 tablespoons of flour with the baking powder and set aside. combine eggs, sugar, lemon juice and lemon rind. Beat well using a whisk. Add the 2 tablespoons of flour and the baking powder to the egg mixture and mix together well. . When the crust is done pour the egg mixture over the baked crust. Bake at 350 for 20 to 25 minutes, until lightly browned.

Cut into squares and sprinkle with the powdered sugar.
