6 Chicken breast halves, boned and skinned
Salt and Pepper to taste
1 cube butter
2 T. grated lemon peel
2 T. lemon juice
1 c. heavy cream
2 tsp. cornstarch (optional)
1/2 c. grated parmesan cheese

Directions:
Directions:
Lightly salt and pepper chicken breasts. Melt butter in skillet and saute chicken for 5 to 8 minutes, turning one to cook on all sides. Place chicken n oven-proof dish (7 1/2 x 11 inch Pyrex). Add lemon juice, lemon peel, to butter in skillet. Stir cornstarch into cream and then slowly add it to skillet mixture, stirring constantly. Pour over chicken. Sprinkle with Parmesan cheese and broil until golden brown.
