2 29oz. cans of peaches
1 c. water
1 T. lemon juice
1 c. sugar
1/4 c. cornstarch

Directions:
Directions:
In a saucepan combine water and peaches. Simmer, covered, about 5 minutes or until the peaches are smooshy. Using a slotted spoon, transfer the peaches to the blender or food processor and puree. Return to the saucepan and stir in lemon juice. Mix the sugar and cornstarch; stir into fruit mixture. Cook and stir until thick and bubbly.

Use it as a creative substitute for maple syrup over pancakes or waffles.
