1 c. rolled oats
8 egg whites
1/2 c. 2% cottage cheese
1 1/2 tsp. vanilla
1/2 tsp ground cinnamon

Poached Apples:
2 sweet apples (i.e. McIntosh, Golden Delicious), peeled, cored, and chopped
2-3 tbsp. water or apple juice
1/4 tsp. ground cinnamon
1/4 tsp. chopped walnuts

Pancakes: Combine all ingredients in a blender and process until smooth. Cook as you would cook regular pancakes and top with Poached Apples.

Poached Apples: Heat apple juice or water in small saucepan with chopped apples. Cook over medium heat until apples are tender but not mushy. Sprinkle with cinnamon and walnuts and stir. Serve over pancakes.
