10 c. chopped tomatoes
2 c. chopped onion
1/3 c. lightly packed brown sugar
1/2 tsp. cayenne pepper
1 1/2 c. white vinegar
4 tsp. pickling salt
2 cloves minced garlic
1 tsp each: ground allspice, cinnamon, cloves, ginger

Directions:

Blanch, peal and coarsely chop tomatoes.
Measure 10 cups into a large stainless steel saucepan.
Add onion, sugar and cayenne pepper.
Bring to a boil, stirring constantly.
Reduce heat; boil gently, stirring occasionally for 30 minutes.
Remove from heat and puree mixture.
Return mixture to saucepan and stir in remaining ingredients.
Bring to a boil, stirring constantly.
Reduce heat; boil gently, stirring occasionally, until desired consistency is reached (about 1 hour)
Ladle into jars and process in boiling water bath for 15 minutes.

For a smoother sauce I seeded the tomatoes before measuring.
This is a great substitute for barbeque sauce and excellent as a dipping sauce.
