2 cups bean mix, washed
2 quarts water
3 stalks celery, chopped
1 large onion, chopped
1 clove garlic, minced
1/2 lb lean ham, diced
1 - 16 oz can whole tomatoes, chopped
10 oz can tomatoes and green chili (optional)

Directions:
Directions:
Soak beans overnight. Drain, add water, celery, onion, garlic, and ham. Bring to boil then simmer for 1.5 to 2 hours. Remove 1/4 cup of beans, mash with a fork and replace. This makes a thicker base. Add tomatoes and pepper and simmer 30 minutes.
