3 cups chilled rice
4 tbsp oil (peanut)
3 eggs beaten
1 tsp salt
pepper to taste
1 green onion, diced

Directions:
Directions:
Break rice apart with wet hands. Heat oil to 400 in wok. Stir fry rice rapidly. Stirring constantly until fully heated. Make a well in the center of rice and pour in beaten eggs. Stir eggs until they are scrambled. Stir into rice until thoroughly blended. Add salt and pepper. Stir fry 30 seconds, add green onion.
