2 c. sugar
1 c. shortening
8 egg whites
3 1/4 c. flour
2 tsp. baking powder
dash of salt
1/2 tsp. baking soda
1 1/2 c. milk
Filling: 1/2 c. butter
8 egg yolks, well beaten
1 1/2 c. sugar
4 Tbs. whiskey or wine
1 c. raisins
1 c. nuts, coarsley chopped
1 c. coconut, grated

Directions:
Directions:
Cream sugar and shortening. Add egg whites
one at a time, beating well after each. Sift dry
ingredients together. Alternately add dry
ingredients and milk to the egg mixture. Mix
well. Bake in two greased and floured 9" pans
in preheated 350º oven for about one hour.

-Filling-
Melt butter in a saucepan. Add sugar and well
beaten egg yolks. Cook and stir over medium
heat until thick. Remove from heat and add
whiskey. Cool slightly by beating. Add nuts,
raisins, and coconut. Spread between layers
and on top and sides of cake.

Personal Notes:
When we were growing up, friends would ask
Mother to bake this cake for them. Uncle
Woodrow Rushton really loved this cake. Our
elementary school secretary paid for the
ingredients for Mother to bake one for her
every Christmas. It was not one that I liked, but
many others begged her to make it.
