1 3/4 c. flour
2/3 c. sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2-3 medium mashed bananas (nice and overripe)
1/3 c. shortening, margarine, or butter
2 Tbsp. milk
2 eggs
1/4 c. chopped nuts (optional)

Mix 1 c. of the flour with sugar, baking powder, baking soda, and salt. Add mashed banana, shortening, and milk. Beat with mixer on low until blended then on high for 2 minutes. Add eggs and remaining flour. Mix until well blended. Stir in nuts (if desired). Pour in greased and floured 8x4 loaf pan. Bake at 350 for 55-60 minutes or until toothpick inserted in the middle comes out clean. Cool for 10 minutes on a wire rack before gently removing from pan.

I like to use wax paper instead of greased and floured pans. Leave a little hanging over the edges and then you can just pull the loaf out with no sticking.
