1-12 to 14 lb brisket



Liberally seasoned with:



Lawry's Season Salt
Black Pepper
Crushed Red Pepper
Parsley Flakes
Thyme Leaves
Garlic Pepper Salt

Directions:
Directions:
Over hot bed of coals grill 10 minutes per side like you would a steak to sear it. Remove and put in a large foil pan. Add 2 quarts of water. Separate charcoal into 2 piles, One at each end of the grill. Add smoking wood chuncks. Put pan between piles on cooking grate. (Indirect Method) Try to maintain about 250 for 8 hours. Keep adding water when necessary. Makes good au jus. When done remove and let stand 10 to 15 minutes before carving. Very good reheated.
