5 or 6 large potatoes
1 stick margarine
1 large carrot grated fine
1/4 TSP celery salt
salt and pepper to taste
chopped parsley

Directions:
Directions:
Boil potatoes in enough water to cover. While they cook saute carrot and onion in butter. Add celery salt, salt and pepper. When potatoes are tender, mash them right in the pan without draining off the water. Add the rest of the ingredients except the parsley and cook 30 minutes, stirring often. Sprinkle with chopped parsley and serve.
