8 - 10 medium potatoes
1 c sour cream
1 (8 oz) pkg cream cheese, softened
4 tbsp butter
1/3 c chopped chives
Salt and pepper to taste
Additional butter
paprika - optional

Directions:
Directions:
Boil potatoes until tender. Beat sour cream and cheese together. Add hot potatoes and beat until smooth. Add butter, chives, salt, and pepper to taste. Pour into well-greased 2 quart casserole dish. Dot with butter and sprinkle paprika on top. Bake at 350 for 25 minutes. Serves 8 to 10.
