3-4 skinless, boneless chicken breasts
1 egg (or egg substitute)
1 cup italian bread crumbs(or 1 cup crushed courtons, i like parmesan ranch!)
1 T. cooking oil

Directions:
Directions:
Beat egg and a dash of milk in a bowl. Place bread crumbs(or crushed courtons) in a plastic food storage bag. Dip the chicken in the egg mixture, then place in the bag of crumbs and shake until completely coated. Spray a rimmed cookie sheet or a cast iron pan with cooking spray, and coat with a small amount of cooking oil. Cook for one hour at 350, turning chicken after 1/2 hour.
