1 pkg. rice vermicelli
8 oz. cooked, peeled shrimp cut in half lengthwise
1 pkg. rice wrappers (6.5" diameter)
1 whole carrot, julienned
1 c. shredded lettuce
1/4 c. chopped fresh basil
1/2 c. hoisin sauce

Directions:
Directions:
Place a package of rice vermicellis into a pot of boiling water, remove from heat and let it soak for three to five minutes until soft. Drain and rinse with cold water.

Fill a large bowl with hot water. Dip one rice wrapper at a time in hot water to soften (do not over soak or it will rip). Lay flat on a dish, and place desired amounts of the shrimp, lettuce, carrot, and basil in the center. Roll the edges of the wrappers slightly inward. Beginning at the bottom edge of the wrapper, tightly wrap the ingredients so that they are not falling out on each side. Repeat with remaining ingredients, and serve.

Sauce for dipping:
In a small bowl, mix hoisin sauce with water until desired consistency has been attained. Heat the mixture for a few seconds in the microwave. Also tastes delicious dipped in peanut sauce!!
