Ingredients:  
Mixture: 3 Tbsp. Basil, fresh; 1 tsp. Salt; 1/4 cup Olive Oil; 1/4tbsp. Pepper; 2-3 Garlic cloves, minced; 1 red Onion, diced; 6 Roma Tomatoes.
Bruschetta: 1-2 loaves long Baguette Bread; 3 oz. Garlic Olive Oil; shredded Provolone or Parmesan cheese.

Dice tomatoes & red onion. Chop basil. In large bowl, mix chopped onion, tomatoes, basil. garlic, salt, pepper, and olive oil.
Cut bread into 1/2 " slices. Brush with garlic olive oil. Broil until lightly browned. Remove and top with bruschetta mixture and a little cheese. Return to oven to melt cheese.
