Ingredients:  
Fruit: 1c. Sugar; 2Tbsp. Tapioca; 1/2 tsp. Almond or Vanilla Extract; 1/2 tsp. Cinnamon; 12-14 Peaches, skinned.
Dough: 1 3/4c. Flour; 1/3c. Sugar; 2tsp. Baking Soda; 1/2 tsp. Salt; 1/3c. Crisco; 1/3-1/2c. Buttermilk.

Fruit: Blanch Peaches in boiling water, then set in cold water to cool so you can remove the skin. Slice peaches & put in 9X13 pan. Sprinkle with sugar, Tapioca, Almond/Vanilla Extract and cinnamon. Stir and add water half way up peaches.
Dough: Mix all ingredients, except buttermilk, until crumbly. Slowly add buttermilk until right consistency, not too sticky. Make flat patties and place over peaches. Sprinkle with sugar. Bake at 375 for 20 minutes or until dough is golden brown.
